Using seasonal and local ingredients to create meals that nourish and delight guests is what has driven Mark McConnell during his long career in food service.
He has lived on the Tweed Coast, where he enjoys the lifestyle and the natural beauty, for more than 40 years and been a chef even longer.
For the past six years, Mark worked for a catering company based in Byron Bay, specialising in weddings, dinner parties and corporate events. In this role, he enjoyed menu planning and food preparation, as well as meeting and working with other creative and talented people.
Mark also spent 10 years working as the Executive Chef at Saltbar in South Kingscliff. He has high interpersonal and communication skills and maintains a high level of professional standards and ethics.
In his spare time, Mark enjoys the beach, golf, cycling and most sports.
His favourite dishes include seasonal salads and vegetables, good quality fish and chips on a summer afternoon and, in winter, traditional roast dinners with all the trimmings.
